Nuestra Historia
From one family kitchen to Stafford
The Las Palmas story began in August 1997 with a single dining room and a promise to cook the way our families did — from scratch, with fresh ingredients and no shortcuts. That promise has grown into a family of restaurants, including our sister kitchens Mi Rancho and Asian Dynasty in Fredericksburg.
Stafford is our newest chapter, and our most ambitious. We built this menu around the dishes we’re proudest of — coastal aguachiles and zarandeado-style seafood, steaks marinated for days, sizzling parrilladas meant for sharing — and paired it with a room made for long dinners and good company.

What we believe
Three things we never rush
01
Hecho a mano
Sauces and marinades are made in our kitchen, and guacamole is made at your table, seasoned the way you like it.
02
Del mar
Aguachiles cured to order, octopus and red snapper zarandeado, and shrimp prepared a dozen different ways.
03
A la parrilla
Ribeye marinated 72 hours in pineapple, skirt steak over the flame and fajitas that arrive still sizzling.
“Come as guests. Leave as family.”
Whether it’s a Tuesday lunch or a fiftieth birthday, our table is yours.
